Simple Steamed Spinach with Lemon, Butter + Flaky Salt

It really is amazing how eating seasonally can help transform you into a better cook. When you have superior ingredients, you don’t need much. This is sort of my mantra when cooking for myself and others. Steamed spinach is an amazingly easy, healthy and delicious weeknight side dish.

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 2-3 servings as a side dish

Ingredients:

  • 1 Pound of Spinach, washed

  • 1/4 Cup Water

To Serve:

  • Flaky Maldon Sea Salt

  • Half of 1 Lemon

  • Pat of Butter

Directions:

  1. Pile spinach into a large skillet with a lid. Pour water in and cover.

  2. Turn the heat on to medium, and gently steam until the leaves are just wilted - about 3-4 minutes. Do not overcook the spinach. You want it to still have some texture.

  3. Gently squeeze out water in a colander, and place spinach on serving dish. Sprinkle flaky salt, squeeze half a lemon on top, and place pat of butter on top.
